
I found a recipe that has become a huge hit in our house and I instantly knew that everyone needed to know about it. I got the recipe from http://www.cleanmondaymeals.com.
I love how adaptable this recipe is! Don’t like mushrooms take them out! Want to add cashews and cilantro like I do, then do it! The add ins are completely up to you and it turns out delicious every time! The recipe that I found was adapted to be gluten free and mine isn’t, but I’ll show both options in the recipe.
Here are your ingredients:
1 and a half pounds of chicken breast.
8 ounces of rice noodles (flat brown rice noodles)
1 red bell pepper
1 cup of chopped mushrooms
Shredded carrots to taste
This is where you can add other things. Spinach, green bell peppers, green onions etc.
SAUCE:
1/4 cup rice vinegar
1/8 cup soy sauce (gluten free soy sauce.)
1/8 cup red chili pepper sauce
2 TBSP of honey
Juice of 1 lime.
Directions:
Boil rice noodles, these cook quickly, then strain and set aside.
Chop vegetables.
Dice chicken. We cook our chicken in a Sous Vide but it can be cooked however you want.
In a bowl, mix together chili sauce, vinegar, soy sauce and lime juice.
In a skillet mix chicken with a tablespoon of ground garlic or garlic paste.
Add veggies and noodles to skillet. Top with sauce. Mix and serve. Top with fresh cilantro!
